Unfortunately I don’t have a lot of overlap with you. (I do own Star Citizen from the initial kickstarter, but haven’t tried it on Linux. There IS a Bottles setup for it that says it works well, but I have no experience to share.)
Phasmophobia I thought I played on Linux a bunch, but the game itself was just terribly buggy. Could be that was Linux, but I could swear my friends on Windows were having similar problems. (One reason we don’t play this anymore.)
The rest I haven’t tried, so can’t help. It feels like either you game quite a bit more broadly than I do, or you got really unlucky. Here’s a quick list of my recently played games with no hiccups - maybe the issue is indy titles tend to work better?

You haven’t told me any of the games you’re trying to get to work.
If they have kernel anti-cheat, anti-Linux checking, etc then you’re going to have bad luck and may want to consider a VM and GPU passthrough.
With the vast majority of games I have tried on Linux, things Just Work out of the box.
I mean, usually you can think about your own process as a black box as long as you can take in whatever format they give and output whatever format they need.

The most compelling feature I always get asked if Jellyfin has ala Plex is the discovery/NAT punch for linking people up.
That does not strike me as something that necessarily breaks backwards compatibility. It would require some centralized discovery, and I think that is probably where we run into an issue because if I were the Jellyfin devs, I wouldn’t want to have to support that, either.
You sound like me. I hope you can find a way to flip your focus: your time outside work should be way more about you than it sounds like your work life is letting it be.
Maybe you are one of the very few with a meaningful job. If not, consider trying to treat your job like the bullshit it is and use your best cycles outside work on stuff that will really make you happy.

Just saying, in this thread about Linux adoption, that for every case of nitpicky issue like this I think it worth mentioning that I have had fewer issues than I had under windows.
Edit to try to be clearer: I usually don’t comment in these threads, but I am worried that these threads then only end up with people in your situation while people like me stay quiet, giving the incorrect impression that all people will have issues.
